Pumpkin Tea Ring Recipe

If you've followed us for awhile now, you know we love food. (We even had an episode on Minimalist Meal Planning!)  In fact, Eryn used to be a professional baker in another life!  Although she no longer consumes gluten or dairy, she still gets that baking itch every once in a while and lucky for us, she'll scratch it by whipping up some delicious allergen friendly recipes from time to time and she's got a perfect fall recipe for you guys today.  Pumpkin anyone?  Here's a delicious recipe for a Pumpkin Tea Ring.  It's allergen friendly, but yummy enough for even the pickiest of eaters.  Enjoy!  

Ingredients:

2 cans organic pumpkin (or 3 1/2 cups fresh baked pumpkin purée)
+ 1 cup grapeseed oil
+ 1 1/2 cup organic cane sugar
+ 1/3 cup non-dairy plain yogurt
(Blend the above in a blender)
+ 3 1/2 cups gf flour blend*
+ 1 tsp baking powder
+ 1 tsp baking soda + 1 tsp cinnamon + 1/2 tsp nutmeg
+ 1 tsp Clove + 1/2 tsp sea salt

Directions:

* Mix dry ingredients
* Mix wet ingredients
* Mix dry and wet together
* Bake in bundt pan for 1 hour at 350 degrees
* Enjoy!
