Healthy Choco-Pumpkin Spice Muffins

Hey friends!  Heather here.  If you've been listening, you know that I've been on a journey this past year to improve my health and in the process have lost almost 20 lbs.  I started out by working with a Nutrition Coach and he provided bi weekly meal plans for me.  After about 7 months following the plan to a T, I switch over to a different plan where he, instead of providing detailed meal plans each week, provides a set of Macronutrient requirements for me to follow in order for me to maintain and/or reach my goals.  Now that I have a reestablished baseline, I find macros easier to follow and am enjoying a little more wiggle room in what I'm eating each day.  I am totally on the Pumpkin Spice everything bandwagon, but wanted to see if I could create a healthier version of a pumpkin spice muffin, and ladies and gentlemen, I did it on the first try!  Here's the recipe.  Enjoy a a couple of these bad boys guilt free!

 

Ingredients

* 4 scoops Vanilla Spice Protein (I use Young Livings brand which you can find HERE)
* 1 cup gluten free flour
* 1/2 cup pumpkin spice apple sauce (yes you heard that right!  If you can't find this seasonal flavor, regular applesauce will work!)
* 1 tsp stevia
* 1/2 cup pumpkin puree
* 1 tbsp cinnamon and/or add a couple drops Cinnamon Vitality oil
* 1 pinch ginger
* 1 pinch all spice
* 1 pinch nutmeg
* 1 tsp baking powder
* 1/2 cup mini chocolate chips (to make dairy free, use enjoy life)
* Approximately 1/4 cup egg whites

Directions

* Preheat oven to 350
* Mix wet and dry ingredients separately
* Combine ingredients
* Drop into muffin tin
* Bake for 13-16 minutes, let cool and enjoy!
